It’s important for me to have easy recipes that work with my plan to lose weight and gain a more comfortable and healthy lifestyle. I don’t want something that is going to take me hours to prepare. Me and meal planning don’t always get along and if I want this to last a lifetime I know I need to find recipes me and my family love that are easy to prepare. I also get that food that is truly good for you usually costs more, but being a family of 6 if I can find something we all love that doesn’t cost an arm and a leg than I know I’ve found a winner and will prepare it again and again! I think I found all of that and a delicious taste with this Italian Inspired Pork Chops. I made it for myself today and packaged it up, but I can easily double the recipe and make it for my whole family next time now that I know how amazing it tastes!

Italian Inspired Pork Chops

makes 4 servings

  • 4- 5 oz boneless pork chops less than an inch thickmeal
  • 3 cups sliced mushrooms
  • 1 1/3 TBS olive oil
  • 1/8 tsp black pepper
  • 1 green pepper (about 1.5 cups) thickly chopped
  • .5 red pepper (about .5 cups) thickly chopped
  • 1 14.5 oz. can of Italian diced tomatoes

 

 

First I added 1/3 TBS of the olive oil to a skillet and added the mushrooms. I cooked on medium heat until mushrooms were tender, about 5 min. and then I set them aside in a bowl.

Next, I added the last 1 TBS of olive oil to my pan and cooked the pork chops on medium-high heat for 4 mins. on each side to brown them slightly. I dusted one side with a little bit of pepper. I took the pork chops out and set aside on a plate.

I drained most of the fluid in my pan and then added the peppers and cooked for 5 min. on medium heat. I then removed them from the pan and placed them in the bowl with the mushrooms.

Finally, I added the can of Italian diced tomatoes and placed the pork chops on top. I covered and simmered them on medium heat for 25 min. I added the mushrooms and peppers to the top of the pan for the last 5 minuets of cooking. food 2food

That’s it! You’re done and you have a delicious, colorful, and flavorful meal ready for you and your family to eat! Or you can pack in 4 small pyrex containers and heat them up in the microwave when you’re ready to eat them.
