Month 2 Weigh In, Check In

Welcome to my first weigh in and check in post! I’m excited to be sharing with you the progress I have made over the last 2 months since deciding to join a program that gives me support and the encouragement that I need to succeed! I didn’t do a month 1 check in since I was told your results are usually visible to others around month 2. Let’s start with the before picture that I took on day 1.

That was me at over 200 pounds. Maybe as I get further away from my beginning weight I’ll give you the actual number, but for now I think you get the picture. I also want to point out that there is more to this picture than what you can see. Sure, I am overweight, but I was also noticing that my heart was racing at night, and that feeling was enough to scare me into making the changes I needed to live a more healthy and active life!

Now I’ll call this the “during” picture as I still have a ways to go, but I’m very encouraged by my results so far!

I’ll break down my progress within the 2 months. It’s common to lose more the first few weeks, but then your weight should even out to about 1-2 pounds a week.

  • MONTH ONE

  • MONTH TWO

pounds lost- 11.2

I’ve also lost 3 inches from my waist and 4 inches off of my hips! The jeans I have on for the check in picture are a size 14. I also have more energy and on most day am down to only 1 cup of coffee!! That’s a huge accomplishment for someone who used to have 4-6 cups in a day. I’m also sleeping better and my heart no longer races at night.

Italian Inspired Pork Chops

It’s important for me to have easy recipes that work with my plan to lose weight and gain a more comfortable and healthy lifestyle. I don’t want something that is going to take me hours to prepare. Me and meal planning don’t always get along and if I want this to last a lifetime I know I need to find recipes me and my family love that are easy to prepare. I also get that food that is truly good for you usually costs more, but being a family of 6 if I can find something we all love that doesn’t cost an arm and a leg than I know I’ve found a winner and will prepare it again and again! I think I found all of that and a delicious taste with this Italian Inspired Pork Chops. I made it for myself today and packaged it up, but I can easily double the recipe and make it for my whole family next time now that I know how amazing it tastes!

Italian Inspired Pork Chops

makes 4 servings

  • 4- 5 oz boneless pork chops less than an inch thickmeal
  • 3 cups sliced mushrooms
  • 1 1/3 TBS olive oil
  • 1/8 tsp black pepper
  • 1 green pepper (about 1.5 cups) thickly chopped
  • .5 red pepper (about .5 cups) thickly chopped
  • 1 14.5 oz. can of Italian diced tomatoes

 

 

First I added 1/3 TBS of the olive oil to a skillet and added the mushrooms. I cooked on medium heat until mushrooms were tender, about 5 min. and then I set them aside in a bowl.

Next, I added the last 1 TBS of olive oil to my pan and cooked the pork chops on medium-high heat for 4 mins. on each side to brown them slightly. I dusted one side with a little bit of pepper. I took the pork chops out and set aside on a plate.

I drained most of the fluid in my pan and then added the peppers and cooked for 5 min. on medium heat. I then removed them from the pan and placed them in the bowl with the mushrooms.

Finally, I added the can of Italian diced tomatoes and placed the pork chops on top. I covered and simmered them on medium heat for 25 min. I added the mushrooms and peppers to the top of the pan for the last 5 minuets of cooking. food 2food

That’s it! You’re done and you have a delicious, colorful, and flavorful meal ready for you and your family to eat! Or you can pack in 4 small pyrex containers and heat them up in the microwave when you’re ready to eat them.

The First Step to Weight Loss

Well, I did it… after months, or should I say years, of trying to lose weight on my own I finally made the decision that I needed help. I signed up for a program that I believe will not only get me to my goal weight, but will also help me keep the weight off in the future. I also believe in the science behind it. Meaning it’s going to take a lot of work and effort from me and isn’t just a “quick fix”. They also focus on other habits of health so I’ll be taught new habits one step at a time in order to learn how to eat smaller portion sizes, drink enough water, sleep enough at night, and my “favorite” get enough movement in a day.

Honestly, I think that first step of making up my mind that I will do this and stick to this new plan is the hardest. Now that I have made up my mind to do it I know that I can accomplish this goal. My first step consists of me starting this blog to talk about my journey and hopefully encourage others to take that first step as well. I guess I should post my before picture as well.before picture
